丈夫和两个小瓜都很爱很爱吃烘皮月饼,而我则最爱冰皮月饼。
记得十九岁那年我在Subang Parade当promoter时,午饭时间在商场外面买了一个让我永生难忘,非~~常好吃的冰皮月饼,它冰冰软软的,带有很香的Pandan味,入口即化。。。简直好吃得不得了!这么多年我一直都在寻找这个好久不见的感觉,但每一年都让我失望。
今年我终于找到了!

安哥爵提供的食谱,让我可以重温那个味道,就连悦沁也开心地吃起冰皮月饼来了。
冰皮月饼外皮
糖粉 Icing Sugar 300g
羔粉 Kao Flour 225g
*汀面粉 Wheat Starch 28g (炒一炒它)*不要放也可以
白奶班油 Softener 70g
清水或斑兰叶水 375 ml
将以上材料混合好,静置十分钟后就可以开始开工包馅料了。
以下我提供几个选择(这可是我隔壁那大厨师的酒店食谱哦),让大家可以尝试一下不同口味的冰皮月饼。我没做,因我只爱吃白莲容单黄冰皮月饼 (芋头应该也不错吃,但没时间力气做馅料)
芋头馅料
150 gm Yam
50ml Peanut Oil
75 gm Sugar
Method:
To make filling, peel and slice the yam before steaming it, Mash cooked yam with sugar, add 50ml of oil till it becomes a smooth paste.
Heat the remaining 25ml of oil. Fry shallots till fragrant. Remove the shallots, and yam paste and fry till fairly dry. Leave to cool.

Durian Egg custard 榴连馅料
60gm Hong Kong Flour
60gm Corn Flour
40gm Custard Powder
50ml condensed Milk
100ml Far Milk
240gm Sugar
3nos Egg
240gm Butter
200gm Fresh Durian Meat
75gm Pistachio Nut
Method
To make filling, Sift plain all flour together, Rub in egg till it becomes cream like, after steamed with butter about 10 minutes rub in butter, steamed 25 minutes. Turn off the heat and set aside to cool. After add the Fresh Durian Meat and Pistachio Nut well.

椰子馅料
600 Fresh Coconut Shredded
150gm Sugar
300ml Water
3 Pandan Leaves
15gm Cooked Glutinous Rice
12ml Peanut Oil
80gm Dried Persimmon
30gm Dried Winter Melon
30gm Milk Powder
80gm Sesame Seed (Roasted)
Method
To make filling, Mix coconut Shredded with water and pandan leaf cook till thickened. Turn off the heat and set aside to cool. After add Peanut Oil, Dried Persimmon, Dried Winter Melon and Milk Powder. Knead coconut paste well.

我的最爱~白莲容单黄冰皮月饼

用自己榨的Pandan叶汁, 没加香精的月饼很有家的感觉。。。

特多瓜子,吃起来没那么甜
如果馅料用完了,剩下的皮可以放些Kaya,捏成小巧可爱的羔粉糕。
用燕菜模型做的月饼,小巧可爱。听爵哥说,用矿泉水罐的底部来做,出来的效果也很漂亮哦!
